Mark Bittman’s (former NY Times columnist) latest book, “Animal, Vegetable, Junk,” traces humankind’s quest for nutrition, from leaves, roots, and carrion to agri-corporations and processed pseudo food. The tragic result of the push to standardize monoculture was that scientists and researchers became allied not with farmers but with bankers, equipment manufacturers, and sellers of seeds and chemicals.
