Zucchini Crab Cakes

Welcome back to Wednesday dinnner on a budget at The Ktchen Sanctuary. What I try to make is a  healthy meal between $1.50- $2.00 a person. Today we make Zucchini Cakes that really do taste like crab cakes!       March 11,2015
Ingredients:
5     cups grated zucchini
2     cups grated potatoes
2     egg, beaten
1/4  cup butter, melted
2     cups bread crumbs
1/2  cup minced onion
2     teaspoons Old Bay Seasoning TM
1/2  cup all-purpose floor
1     cup vegetables oil for frying
Directions:

  1. In a large bowl, combine grated zucchini and grated potato. With a towel add grated zucchini and grated potato and squeeze out all water.
  2. In a large bowl add zucchini and potato add egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
  3. Shape mixture into patties. Dredge in flour.
  4. In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.

Prepare time is 20 minutes  cooking time is 10 minutes ready in 30 minutes.
