Neighborhood Chef #1 Recipe: "Energy Bombs"

Dawn Graham brought her “energy bombs” recipe for a demonstration in the Sanctuary Neighborhood Chef kitchen. Below is the recipe:

YOU’LL NEED: (items in “( )” are suggestions to maximize nutritional value)

1 cup dry old fashioned oats

2/3 toasted coconut-flakes or shredded (unsweetened)

½ cup peanut butter (natural or try almond butter)

½ cup wheat germ or (ground flax seeds)

1/3 cup honey (raw honey from the Troy Farmer’s Market is super)

1 tsp vanilla (pure rather than imitation)

½ cup of one or two of the following:

raisins

chopped dates

dried cranberries, apples, pineapple, apricots, cherries

chopped peanuts, walnuts, almonds, pecans

toasted sesame seeds

sunflower seeds

pumpkin seeds

chocolate chips, butterscotch chips, white chocolate chips

RECIPE: makes 20-25

In a large bowl combine all dry ingredients (everything but the peanut butter, honey and vanilla).  In a smaller bowl stir peanut butter, honey and vanilla together.  If this mixture is too stiff, try warming the peanut butter and honey in a microwave for 15 -30 seconds, then add the vanilla. Stir the peanut butter, honey vanilla mixture into the dry ingredients so that everything is coated and then shape in balls using a spoon, scoop or just your hands. Store these in a covered container. Most people like them a bit chilled so store them in the fridge if you like.
