Lasagna

Today’s menu was home made Lasagna.

I first started with making my sauce. I chopped  1 onion and 3 clovers of garlic added about 3 tablespoons of olive oil and cooked that in a big pot for about 10 minutes until tender. I then added my seasoning 1 tablespoon of each oregano, basil, parsley, salt and peper to taste. Let it cook on medium heat for about another 5 minutes the added 2 cans of crushed tomatoes and 1 can of tomato sauce, 1 tablespoon of sugar and a bay leaf. Stir and let simmer for about an hour. While that’s cooking, I mixed 1 pound of ricotta, mazzarella cheese, parmesan cheese, 2 eggs, 1 teaspoon of each basil, oregano, parsley salt and peper to taste. When my sause was ready I covered the bottom of the pan with sauce then I layered my uncooked pasta on top of my sauce. I then spread my cheeses on top of the pasta once until it’s all covered then add my sauce covering the cheese, then I sprinkle mazzarella chesse, then sprinkle parmesan cheese, then sprinkle just a little oregano. You then start the layers over again with the pasta, cheese, sauce, chesses. When you are done layering your lasagna you cover it with aluminum foil and bake it in a pre heated oven at 350 for about 45 you then take the aluminum foil off and bake for about another 15 minutes or until done.

Ingredents for Sauce:

1 onion chopped

1 tbsp parsley

salt and peper to taste

2 15.5 oz. cans crushed tomatoes

1 15.5 oz. can tomato sauce

1 lb. ricotta cheese

1 lb. grated mazzarella cheese

1/2 lb. parmesan cheese

2 eggs

1 tsp basil

1 tsp oregano

1 tsp parsley

salt and peper to taste

Pre-heat oven at 350 degrees. Mix together ricotta cheese, 1 cup mazzarella cheese, 2 eggs, basil, oregano, parsley and salt and peper to taste. Then in lasagna pan cover bottom of pan with a small layer of sauce then add uncooked lasagna to pan. Cover lasagna with cheese mixture then add some sauce to cover, then sprinkle mazzarella cheese and parmesan cheese on top, then sprinkle oregano. Repeat layers until all lasagna is gone. cover with aliunCook for 1 hour.
